Ingredients

Meatballs

  • 1 lb ground beef

  • 3 tbsp cassava or coconut flour

  • 2 tbsp extra-virgin olive oil

  • 2 tsp garlic powder

  • 2 tsp dried oregano

  • 1½ tsp onion powder½ tsp sea salt

Soup

2 tbsp extra-virgin olive oil   

  • 1 yellow onion, chopped

  • 3 large carrots, chopped

  • 3 stalks of celery, chopped

  • 2 zucchini, chopped

  • ½ tsp sea salt + additional to taste

  • 6 cloves garlic, minced

  • 7 cups chicken bone broth (organic)

  • 1 tbsp apple cider vinegar

  • 2 cups of baby spinach

  • Parsley to garnish

Method

Make meatballs: Preheat oven to 350ºF or Air Fryer. Line a large baking sheet with parchment paper. In a large bowl, combine all meatball ingredients. Create the small meatballs. Place on baking sheet. Bake for about 15 minutes, until just cooked through.

2. Make the soup: In a large pot on medium, heat oil. Add onion and cook, stirring occasionally, until tender, about 4 minutes. Add carrots and cook, stirring occasionally, until softened, 3 minutes. Add celery, and zucchini season with salt, and cook, stirring occasionally, for 2 minutes. Add garlic and cook, stirring, for 2 minutes.

3. Pour in broth, increase heat to high and bring to a boil. Reduce heat to medium-low, add meatballs, partially cover, and simmer for 10 minutes. Stir in vinegar.

4. Just before serving, add spinach and pepper flakes, .l Season with additional salt and black pepper. Garnish with parsley (if using).
